As part of my intermittent fasting journey, I focus on eating delicious and nutritious meals that fuel my body! Here’s one of my favourite recipes that I created. It’s packed with wholesome ingredients to keep me energized and satisfied.
Ingredients
Red, yellow, green Bell Peppers – halved & seeds removed
4 large tomatoes – halved
Courgette – chopped
2 carrots – chopped
Onion – quartered
Whole garlic bulb – pealed
Passata – 100mls
Creme fraiche or cream – 25mls
Dried Oregano – to taste
Black pepper – to taste
Olive oil (only a small amount for roasting the veg)
Method
Roast above until caramelised.
Add caramelised vegetables to the blender to produce yummy vegetable sauce.
Add crème fraiche & Passata.
Use sauce to top whole grain pasta or on a bed of spinach (which I prefer).
Garnish with fresh Basil & grated Parmigiano Reggiano.
